If you're new to grilled corn in the husk, season the ears with butter, Parmesan cheese and parsley. It's especially good! Be sure to give the corn a long soak before putting it on the grill. Ingredients

  • 4 large ears sweet corn in husks
  • 1/4 cup butter, softened
  • 2 tablespoons minced fresh parsley
  • 1/4 cup grated Parmesan cheese

Directions

  1. Carefully peel back husks from corn to within 1 in. of bottom; remove silk. Soak in cold water for 20 minutes; drain. Pat corn dry. Combine the butter and parsley; spread over corn. Rewrap corn in husks and secure with string.
  2. Grill corn, covered, over medium heat until tender, turning often, 20-25 minutes. Sprinkle with cheese.

When picking sweet corn, the first thing to pay attention to is the outside. The husk should be bright green, slightly damp and wrapped tightly against the body of the corn—this indicates freshness. Meanwhile, the tassel of the corn should be golden brown and slightly sticky. You can also give the corn a squeeze; if it's nice and firm with plump kernels, then it's the perfect cob to take home.

Do you need to soak the corn before grilling?

When grilling corn, it's essential to soak corn in cold water for about 30 minutes beforehand in order to prevent burning. This also adds extra moisture so the interior of the corn steams as the whole ear is grilled.
