  • 1 cup unsalted butter
  • 1-3/4 cups packed brown sugar
  • 2 large eggs, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 cups semisweet chocolate chips

Directions

  1. Place butter in a small heavy saucepan. Cook over medium heat until golden brown, 5-7 minutes; cool slightly.
  2. Beat brown sugar and eggs in a large bowl until blended. Beat in browned butter slowly; then vanilla.
  3. Combine the flour, salt, baking soda and baking powder; gradually add to brown sugar mixture and mix well. Stir in chocolate chips.
  4. Drop by quarter cupfuls 2 in. apart onto parchment-lined baking sheets. Bake at 350° until golden brown, 13-15 minutes. Remove to wire racks to cool.

Directions

  1. Preheat oven to 425°. In a small bowl, dissolve yeast and sugar in warm water. In a large bowl, combine flour, baking powder and salt. Mix in oil, egg, vinegar and yeast mixture. Beat on medium speed until smooth, dough will be sticky.
  2. Gently shape into a ball, place in a greased bowl, turning once to grease the top. Cover with a clean kitchen towel; let rise until doubled, about an hour.
  3. Grease a 14-in. pizza pan. Punch down dough; transfer to prepared pan and press to edges. Bake until lightly browned, 8-10 minutes.
  4. Top as desired; bake until toppings are heated through, 10-12 minutes longer.

  • 1-1/2 cups all-purpose flour

  • 1-1/2 cups buttermilk
  • 1/2 cup mashed sweet potato

  • 1 teaspoon vanilla extract
  • 3/4 cup shredded peeled apple
  • Maple syrup and butter

Directions

  1. Preheat oven to 425°. Spray a 15x10x1-in. baking pan with cooking spray. Arrange sausages in pan and bake until heated through, about 10 minutes. Cool sausages slightly. Remove to a cutting board; cut into 1/2-in. slices. Wipe any excess oil from pan with a paper towel.
  2. Meanwhile, in a large bowl, whisk together flour, brown sugar, baking powder, pie spice, baking soda and salt. In a separate bowl, whisk together buttermilk, sweet potatoes, eggs, butter and vanilla; stir in shredded apple.
  3. Pour buttermilk mixture into flour mixture and stir until just combined. Stir in half the sliced sausages. Spread batter into same baking pan; top with remaining sausages. Bake until pancake is set, 12-15 minutes. Cut into 8 pieces and serve with maple syrup and butter.

  • 2 cans (12 ounces each) cola, divided
  • 1 cup packed brown sugar, divided
  • 1 bone-in pork shoulder roast (5 to 7 pounds)

  • 1 teaspoon pepper
  • 1-1/2 cups enchilada sauce
  • 1 can (7 ounces) chopped green chiles
  • Hot cooked rice, optional

Directions

  1. In a large bowl or shallow dish, combine 1 can cola and 1/2 cup brown sugar. Add pork; turn to coat. Cover and refrigerate 8 hours or overnight.
  2. Drain pork, discarding marinade. Place pork in a 5- or 6-qt. slow cooker. Add salt, garlic powder, onion powder, pepper and remaining can of cola. Cook, covered, on low until meat is tender, 8-10 hours.
  3. Set meat aside until cool enough to handle. Remove meat from bones; discard bones. Shred meat with 2 forks. Discard cooking juices and return meat to slow cooker. Stir in enchilada sauce, green chiles and remaining 1/2 cup brown sugar. Cook, covered, on low until heated through, about 2 hours.
  4. If desired, serve pork in bowls over rice with toppings of your choice.

  • 1 cup sugar
  • 3/4 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 4 tubes (6 ounces each) refrigerated buttermilk biscuits
  • 3/4 cup butter, melted
  • 1/2 cup apple juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon rum extract
  • Toasted chopped pecans, optional

Directions

  1. Line a 5-qt. slow cooker with a piece of aluminum foil, letting ends extend up the side. Grease foil.
  2. Combine the sugars, cinnamon and allspice in a large bowl; sprinkle 3 tablespoons sugar mixture in bottom of prepared slow cooker. Cut biscuits in quarters. Add biscuit pieces to bowl; toss to coat. Transfer coated biscuits to slow cooker; sprinkle any remaining sugar mixture over biscuits.
  3. Stir together butter, apple juice and extracts; pour over biscuits.
  4. Cook, covered, on low 2-1/2 to 3 hours. Remove lid and let stand for 10 minutes. Carefully invert onto a serving platter. If desired, sprinkle with pecans.

Directions

  1. Preheat oven to 350°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan. Place on a baking sheet. In a bowl, mix cracker crumbs, sugar and cinnamon; stir in butter. Press onto bottom of prepared pan. Sprinkle with cinnamon sugar. Bake until crust starts to brown, 6-8 minutes. Cool on a wire rack. Reduce oven setting to 325°.
  2. In a bowl, beat peanut butter and milk until combined. Spread over cooled crust; set aside. In another large bowl, beat cream cheese, sugar and vanilla until smooth. Add eggs; beat on low speed just until blended. Pour over crust. In a small saucepan, stir together preserves and lemon juice over medium heat until preserves have melted. Spoon mixture by tablespoonfuls over top. Cut through batter with a knife to swirl. Place springform pan in a larger baking pan; add 1 in. hot water to larger pan.
  3. Bake until center is just set and top appears dull, about 1-1/4 hours. (Center of cheesecake will jiggle when moved.) Cool cheesecake on a wire rack for 10 minutes. Loosen side from pan with a knife; remove foil. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled. Remove rim from pan.

  • FROSTING:
  • 6 ounces white baking chips
  • 1/4 cup heavy whipping cream
  • 2 teaspoons vanilla extract
  • 6 large egg whites, room temperature
  • 1-1/2 cups sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 2 cups unsalted butter, cubed
  • Blue, red and green liquid food coloring
  • 4 ounces ready-to-use rolled fondant
  • 2 candy eyes
  • Optional: Sea creature candies and graham cracker crumbs

Directions

  1. Preheat oven to 350°. Line bottoms of 3 greased and floured 9-in. round baking pans with parchment; grease paper. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Combine flour, baking powder, salt and baking soda; add to the creamed mixture alternately with sour cream, beating well after each addition.
  2. Transfer to prepared pans. Bake until edges begin to brown, 25-30 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  3. In a microwave, melt baking chips with cream until smooth, stirring every 30 seconds. Stir in vanilla. Set aside to cool slightly. Meanwhile, in heatproof bowl of stand mixer, whisk egg whites, sugar, cream of tartar and salt until blended. Place over simmering water in a large saucepan over medium heat. Whisking constantly, heat mixture until a thermometer reads 160°, 8-10 minutes.
  4. Remove from heat. With whisk attachment of stand mixer, beat mixture on high speed until cooled to 90°, about 7 minutes. Gradually beat in butter, a few tablespoons at a time, on medium speed until smooth. Beat in cooled baking chip mixture until blended.
  5. Set aside 1/4 cup frosting. Tint remaining frosting desired shades of blue; spread blue frosting between layers and over top and sides of cake. Tint 1/2 ounce fondant red. Divide remaining fondant in half. Tint 1 portion blue. Leave other half white. On a work surface dusted with confectioners' sugar, roll out blue fondant to 1/8-in. thickness. Using a 3-in. round cutter, cut out 1 circle; repeat with white fondant. Using a sharp knife, cut mouth opening, teeth and body shape on lower portion of white circle. Place white fondant cutout onto blue circle. Roll red fondant to 1/8-in. thickness; cut a small triangle and place in mouth opening, under white fondant and on top of blue fondant. If needed, brush fondant lightly with water to help layers adhere. With remaining rolled blue fondant, cut a crescent moon shape for tail and a triangle for fin. Secure fin and tail to shark body, brushing edges lightly with water, if needed, to help pieces adhere. Secure candy eyes to shark body with small amount of reserved frosting. Place fondant shark on side of cake by pressing gently into frosting. Tint remaining reserved frosting green. Using a leaf tip, pipe seaweed on sides of cake. If desired, decorate cake with sea creature candies and graham cracker crumbs for sand. Refrigerate until serving. Remove from refrigerator 30 minutes before serving. Refrigerate leftovers.

Prep: 25 min. Bake: 15 min.

Makes

12 sandwiches

Ingredients

  • 12 large eggs
  • 2/3 cup 2% milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • SANDWICHES:
  • 12 English muffins, split
  • 4 tablespoons butter, softened
  • 12 slices Colby-Monterey Jack cheese
  • 12 slices Canadian bacon

Directions

  1. Preheat oven to 325°. In a large bowl, whisk eggs, milk, salt and pepper until blended. Pour into a 13x9-in. baking pan coated with cooking spray. Bake until set, 15-18 minutes. Cool on a wire rack.
  2. Meanwhile, toast English muffins (or bake at 325° until lightly browned, 12-15 minutes). Spread 1 tsp. butter on each muffin bottom.
  3. Cut eggs into 12 portions. Layer each muffin bottom with an egg portion, a cheese slice (tearing cheese to fit) and a Canadian bacon slice. Replace muffin tops. Wrap sandwiches in waxed paper and then in foil; freeze in a freezer container.
  4. To use frozen sandwiches: Remove foil. Microwave a waxed paper-wrapped sandwich at 50% power until thawed, 1-2 minutes. Turn sandwich over; microwave at 100% power until hot and a thermometer reads at least 160°, 30-60 seconds. Let stand 2 minutes before serving.

Change up your hummus game by swapping in soybeans for chickpeas. Edamame hummus is as good as traditional hummus as a snack, sandwich, dip or spread.

Ingredients

  • 1 package (16 ounces) frozen shelled edamame, thawed
  • 1/2 cup tahini
  • 1/2 cup water
  • 1/3 to 1/2 cup lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon sea salt
  • 1/4 cup olive oil
  • 1/4 cup minced fresh mint
  • 2 jalapeno peppers, seeded and chopped, optional
  • Assorted fresh vegetables
  • Rice crackers

Directions

  1. Microwave edamame, covered, on high until tender, 2-3 minutes. Transfer to a food processor; add tahini, water, lemon juice, garlic, salt, oil, mint and, if desired, peppers. Process until smooth, 1-2 minutes. Serve with assorted fresh vegetables and rice crackers.

  • Edamame—soybeans that are harvested early, before the beans become hard—are a popular Asian food. The young beans are parboiled and frozen to retain their freshness. Look for them in the freezer section of grocery and health food stores.
  • Known as a good source of fiber, protein, calcium and vitamin C, edamame are a tasty addition to soups, salads and main dishes. They are also delicious eaten alone as a healthy snack.
  • Peppers (Hot)
    Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

    Making rock candy is a great intro to being crafty in the kitchen. It’s a fun project for scientists of any ageand learning how to make rock candy is the perfect rainy day activity.

    How to Make Rock Candy

    Ingredients

    • 2 cups water
    • 4 cups sugar, plus 1/2 cup for coating
    • to 1 teaspoon flavoring
    • 2-4 drops food coloring
    • Wooden skewers
    • Mason jars

    Instructions

    Step 1: Fire up the saucepan

    Bring the water to a boil over medium heat. Add the sugar one cup at a time, making sure to stir now and then. Once the sugar is dissolved, remove the pan from the heat and put it off to the side to cool.

    Step 2: Add some flavor

    Add your flavor to the sugar solution. Fruity flavors like orange, strawberry or cherry are always big hits, but almond or lavender are delicious grown-up options as well. This is also the perfect time to add a few drops of food coloring.

    Step 3: Prep your skewers

    While the sugar-water mixture is cooling, wash out a few mason jars. Take your wooden skewers and carefully dip them into the sugar solution. Pour the extra sugar on a plate and roll the skewers in sugar to coat them. Finally, clip a clothespin to each skewerthis will let you hang them in your jars or glasses.

    Step 4: Let the magic unfold

    Once completely cooled, fill each jar with the remaining sugar solution. Place one sugar-coated stick in each jar while being careful not to let them touch the jar itself.

    Step 5: Wait three to seven days

    Gently cover the jars with plastic wrap to make sure no unwanted bugs wing their way in. Leaving the skewers in the solution longer will make the rock candy larger.

    Step 6: Eat the candy!

    Unwrap the jars and remove the skewers. They should be chunky, sugary and ready to eat! Don’t forget to check out our collection of Halloween cupcakes.

    Notes from the Kitchen:

    • If you don’t have mason jars: Water glasses or even plastic cups will do the trick as long as they’re large enough to suspend the skewers.
    • If your rock candy is stuck to the jar: Simply pop the jar in warm water for a couple of minutes. This should soften the sugar enough that you can ease your rock candy out.

    Prep: 20 min. Bake: 10 min./batch + cooling

    Makes

    5 dozen

    Ingredients

    • 1 cup butter, softened
    • 3/4 cup sugar
    • 3/4 cup packed brown sugar
    • 2 large eggs, room temperature
    • 1 teaspoon maple flavoring
    • 2-1/2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 2 cups white baking chips
    • 1 cup chopped pecans
    • MAPLE GLAZE:
    • 1/3 cup butter, cubed
    • 1-3/4 cups confectioners' sugar
    • 1/3 cup maple syrup
    • 1/4 teaspoon maple flavoring

    Directions

    1. Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and maple flavoring. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture. Stir in baking chips and pecans.
    2. Drop dough by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 2 minutes. Remove to wire racks to cool completely.
    3. For glaze, in a saucepan, melt butter over medium heat. Remove from heat. Gradually beat in confectioners’ sugar, maple syrup and maple flavoring until smooth.
    4. Drizzle over cookies; let dry completely. Store between pieces of waxed paper in airtight containers.

    Ingredients

    • 1/4 cup canola oil, divided
    • 1 small onion, chopped
    • 1 rotisserie chicken, skin removed, shredded (about 3-1/2 cups)
    • 1 package (8.8 ounces) ready-to-serve long grain rice
    • 1 can (15 ounces) black beans, rinsed and drained
    • 1 can (4 ounces) chopped green chiles
    • 2 teaspoons minced chipotle peppers in adobo sauce
    • 1/4 teaspoon ground cumin
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1-1/2 cups shredded Mexican cheese blend
    • 1/3 cup chopped fresh cilantro
    • 6 flour tortillas (10 inches), warmed
    • Optional: Salsa, sour cream, guacamole and chopped tomatoes

    Directions

    1. Preheat oven to 425°. Place a 15x10x1-in. baking pan in the oven.
    2. In a large skillet, heat 2 tablespoons oil over medium-high heat; saute onion until lightly browned, about 5 minutes. Stir in chicken, rice, beans, chiles, chipotle pepper, cumin, salt and pepper; cook until heated through. Remove from heat; stir in cheese and cilantro.
    3. Spoon 1 cup chicken mixture on the bottom third of each tortilla. Fold bottom and sides of tortilla over filling and roll up. Brush preheated baking pan with some of the remaining oil. Place chimichangas seam side down; brush with oil. Bake until crisp and golden, about 15 minutes, turning halfway through baking. Serve with toppings as desired.
