Casseroles are widely known as the ultimate comfort food, and it’s no wonder. Whether using rice, bread or pasta as the base, these one-pot wonders are usually creamy and cheesy, and can make just about any day a little better. It doesn’t hurt that our favorite casserole recipes are quick to prepare and require very little cleanup. This chicken broccoli casserole is no exception.

Using store-bought stuffing and cooked chicken, whether from a rotisserie chicken or your own leftovers, broccoli chicken casserole becomes one of the easiest weeknight dinners; make two, and you have a perfect dish to store in the freezer for another ready-to-go meal. Chicken broccoli casserole is already chock-full of vegetables, but it’s versatile enough to add any extras that you like.

Chicken Broccoli Casserole Ingredients

  • Cooked chicken: Use any cooked chicken, whether its from leftover roast chicken, store-bought rotisserie chicken (rotisserie chicken recipes are excellent short-cut meals!) or grilled chicken breasts. If you buy a pre-cooked rotisserie chicken, a half chicken should be just the right amount. You’ll pull the chicken from the bones and then chop the meat into small pieces.
  • Broccoli: Using frozen broccoli is quick and easy, but you can also use fresh broccoli if you prefer. Just make sure to steam it beforehand so it’s cooked through.
  • Broccoli cheese soup: Condensed soup casserole recipes have long been staples in home kitchens. The soup adds a thick, creamy texture to this casserole, as well as a broccoli-cheese flavor.
  • Chicken stuffing mix: Using instant stuffing mix keeps this recipe quick and easy. Make sure to only use 1-1/2 cups of water even if the directions call for more! PS: Did you know you can make your own dried instant stuffing mix?
  • Cheddar cheese: Everyone wants an extra cheesy casserole! Use shredded cheddar cheese for ease, but grating your own results in better flavor.

Directions

Step 1: Prepare stuffing

Preheat the oven to 350°F. Prepare the stuffing mix according to package directions, using only 1-1/2 cups water.

Step 2: Assemble

Prepare a greased 11×7 inch baking dish and set aside. In a large bowl, combine the chicken, broccoli and condensed soup.

Transfer to the baking dish and spread out into an even layer.

Step 3: Bake casserole

Top with the stuffing and then sprinkle with cheese. Cover and bake for 20 minutes, then uncover and continue to bake until heated through, 10 to 15 minutes longer.

Recipe Variations

  • Change up the topping: There are lots of ways to top a casserole, and they’re all delicious! Instead of stuffing, sprinkle with a heavy layer of toasted breadcrumbs or crushed cornflakes. You can even top it with Tater Tots, like this quick Tater Tots bake, and a handful of cheese for something a little different!
  • Add some spice: This casserole is delicious on its own, but what can’t be improved with a little kick? Add a can of roasted hatch chiles for more depth of flavor, or some spices like garlic powder, smoked paprika or dried mustard powder.
  • Make it vegetarian: You can still enjoy the comfort of this casserole without the chicken. Make sure to buy vegetarian condensed broccoli soup and stuffing mix, and add a little extra broccoli and cheese to make up for the chicken.

Can you freeze chicken broccoli casserole?

Yes, you can freeze this broccoli chicken casserole. Let the casserole cool, then transfer individual portions to freezer containers or freezer-safe bags. To use, partially thaw in the refrigerator overnight. Then transfer to a microwave-safe dish and microwave, covered, on high until a thermometer inserted in the center reads 165°. Stir occasionally while it’s thawing, and add a little broth if necessary.
