- Pizza crust: Our recipe keeps things simple with refrigerated pizza dough from a tube. If you like to make your own pizza dough, you can do that, too.

- Shredded cheese: A blend of cheddar (sharp or mild) and Monterey jack cheeses melt beautifully together for this breakfast pizza.
Directions
Step 1: Prepare the crust
Preheat the oven to 400°F. Unroll the pizza crust, and press it into a 10×15-inch baking pan so that it covers the bottom with a 1/2-inch high edge on all sides. Prick the crust all over with a fork, and brush it with 1 tablespoon oil. Bake for seven to eight minutes, until it’s puffed and lightly browned.
Step 2: Make the eggs
Whisk the eggs with a little water until they’re blended and frothy. Cook the eggs in a skillet in 1 tablespoon oil over medium heat, stirring often, until they’re thick with soft curds.

Step 3: Assemble the pizza
