When late summer rolls around, everyone is looking for new and delicious ways to use up their bumper crop of zucchini. This year, try a new twist on a classic with pina colada zucchini bread! The combination of crushed pineapple with coconut and rum extracts recreate the traditional cocktail flavors. Instead of leaving your neighbors and co-workers with an anonymous bag of zucchini, bake them a loaf of this delicious quick bread—they’ll be sure to ask for the recipe!
